Young Women - Personal Progress & "Brittle" Testimonies

I am really excited about tonight. It's my very first night to teach Personal Progress with the Young Women. Everyone is to wear as many items that begin with the lettter "P" to the activity. The one with the most "P" items on will win a Prize - some Peanut Brittle, Pop rocks, and a Pay Day candy bar. We are serving Pizza, discussing testimonies and how important it is to share our testimonies with others.

Then, we will write our testimonies on slips of paper. We will later glue each one inside the front of a Book of Mormon for the girls and the Sister Missionaries to use. The Sister Missionaries will speak with the girls during this time also.

Then, each girl will go home with a bag of Peanut Brittle with a little card attached that reads: Strengthen your "BRITTLE" testimony by continuously working on Personal Progress.

Megumi - Covington


This is one of my absolute favorite restaurants!

The employees are very kind and helpful (especially to a very inexperienced customer like me). My first couple of times there they rigged the chopsticks to make them easier for me to use. The waitress said, "like for the children." They are excited to explain the typical culture and the differences in the sushi we eat and the sushi that is eaten in Japan.

The atmosphere is simply relaxing and it completes the essence of the cuisine and dining experience.

DELISH!!!

This is a lighter copycat version of Bonefish Grill's Bang Bang Shrimp. We had this tonight for dinner. It was extremely easy and quick to make. My kids and Hubster LOVED it and were dissapointed that I didn't have more!

I did have to tweek it a slight bit because I didn't have a few of the ingredients on hand so I made some substitutions.

Instead of the lettuce/cabbage salad I served it over white rice. It was good, but next time, I definitely want to try the salad though! On a scale of 1-5 Hubster gave it a 6!!! Thanks skinnytaste.com! This will definitely be in our meal rotation from now on!!

Amanda's Zucchini Bread

This recipe my little sister sent me. I can't wait to try it:

AMANDA'S ZUCCHINI BREAD

1-1/2 cups flour
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp baking powder
1/4 tsp nutmeg
1 beaten egg
1 cup sugar
1 cup shredded zucchini (I normally puree it in my food processor.)
1/4 cooking oil
1/2 cup walnuts/pecans (optional)

Grease the bottom and 1/2 up the sides of a loaf pan.
Preheat the oven to 350 degrees.
In a mixing bowl, combine egg, sugar, zucchini, and oil. With mixer going, add all the dry ingredients one at a time, leaving the flour for last.
Continue mixing until just moistened. Batter will be lumpy.
Pour into prepared pan.
Bake in oven for 50-55 minutes or until toothpick in center comes out clean.

My version: If I’m going to freeze it, I’ll take it out a little early, so that the bread is sticky, but cooked through. Also, I always double the recipe. It’s easier in my opinion.

Salad in a Jar

I am so excited that my Salad in a Jar worked! I made a taco salad for Hubster to take to work with him. All of the men at the station were intrigued and jealous! It looked so nice and scrumptious that a couple of the guys went to the local grocery store to get themselves the ingredients to make them one!



Hubby said the salad was crisp and fresh tasting. The only thing I'll do differently is a suggestion from my lil' sister. Hubster has a hard time remembering to return the dishes, plus I'm afraid of my beautiful glass jars being broken, and I wont make the kiddos one like that for the same reason. Sooooo, my brilliant little sister said to use peanut butter jars! They are plastic, still see-through, and it doesn't matter if they are dropped or if I don't get them back (but I won't tell Hubster that last part!)

Ta-da!! Love it; love it; love it!! Can you tell which is for me and which is for Hubby? Check the amounts of lettuce vs beef. Now can you tell?

My Mini Won Ton "Cup"

I have been on this kick of using won ton wrappers lately! Love them. You can make little mini cups, large cups, chips, pockets, etc. I've done lasagna cups, taco cups, southwestern cups, and more. This little "recipe" is nothing more than a combo of ingredients I had on hand.


 Nasoya is the brand of won ton wraps at the local Walmart. Their webpage has a ton of recipes using their products including the wraps. One of my favorites to make at home is the Crab Rangoon.

Ok, on to the Mini Won Ton Cup Recipe (for lack of a better name -- I'm all for suggestions).
First, dice / mince tomatoes and green bell peppers. I really wish I would have had jalapenos on hand to add to this. Feel free to add any other vegetables, colored peppers, or ingredients to enhance the flavors.
Using my Pampered Chef Mini Muffin Tin, I placed the Wonton wrappers over each cup and then used the Mini Tart Shaper to press them into the cups.
I mixed the bell peppers, and tomatoes with the corn.
For the first half of them I placed the corn mixture first then covered it with ground beef and cheese. This was to hide the vegetables because my daughter likes to say she doesnt' like the same veggies she ate the day before.
The second half of them, I mixed everything together (due to laziness and time constraints).
Here are the finished cups. You can tell the difference between the hidden veggies and the others.

Then, I baked them at 350 until the edges were golden brown (sorry, I forgot to time them).
And presto, the beauties are done.
These vary due to on hand ingredients so every time I make them they are different. We also topped them with a dollop of either salsa, thousand island, or ranch dressing.

I am absolutely flabbergasted!! I know you are able to sell your textbooks back on-line, but I have always been afraid of selling it to one company only to find out I could have received a higher amount from another company, but TADA! A solution.

They show you a list of websites and how much you will receive from each with a link to the pages. It's convenient, free, and there's NO REGISTRATION.

It's as simple as open the webpage. Type the ISBN. Click search and you're done!! Then, you click the website of the highest price offered and it brings you to that site. Brilliant!

Chili's Copycat Recipes NEEDED

I am in DIRE need of the Chili's Restaurant copycat recipes for their Classic Nachos and their ranch dressing. If anyone can help with this, it would be greatly appreciated!

Why do I need them so badly, you ask? Because they are so delicious and I am in the process of lowering my salt intake drastically for health reasons. If I can attain recipes for my favorite restaurant food, I can alter the sodium in them and I won't miss out on my favorites!
